Ceci permet de conserver le meilleur des qualit\u00e9s nutritionnelles et gustatives de la farine.<\/p>\n<h5>Le moulin \u00e0 pierre<\/h5>\n<p>Toutes nos farines sont moulues sur meule de pierre avec un moulin de type Astri\u00e9 (proc\u00e9d\u00e9 invent\u00e9 par Andr\u00e9 Astri\u00e9). Le proc\u00e9d\u00e9 \u00e0 la meule inf\u00e9rieure fixe (dormante) et la meule sup\u00e9rieure tournante et suspendue. Ceci permet de d\u00e9rouler la graine, de conserver le germe sans \u00e9chauffer la farine lors de la mouture.<\/p>\n<p>Le grain arrive par le centre de la meule tournante qui est perc\u00e9e. La rotation de la meule am\u00e8ne, progressivement, le grain du centre vers la p\u00e9riph\u00e9rie en le d\u00e9roulant peu \u00e0 peu avant que les surfaces, de plus en plus rapproch\u00e9es et douces, ne conduisent au glissement et \u00e0 l\u2019\u00e9vacuation des enveloppes non bris\u00e9es.<\/p>\n<p>Au cours de la m\u00eame op\u00e9ration, toutes les substances lib\u00e9r\u00e9es sont intimement m\u00e9lang\u00e9es, y compris le germe, malgr\u00e9 sa consistance l\u00e9g\u00e8rement grasse et tenace.<\/p>\n<p>Suite \u00e0 la mouture, la farine est tamis\u00e9e dans des bluteries de diff\u00e9rents calibres qui permettent d\u2019obtenir des farines plus ou moins compl\u00e8tes suivant leur finesse.<\/p>\n<p style=\"text-align: right;\"><em>\u00ab\u00a0Le progr\u00e8s que j\u2019ai r\u00e9alis\u00e9 permet un contr\u00f4le parfait de l\u2019\u00e9cartement des meules. S\u2019y ajoute une rectification des surfaces travaillantes, \u00e0 la place du piquage traditionnel qui casse le son. Cela permet d\u2019obtenir une farine calibr\u00e9e, type 80, en un seul passage, sans pr\u00e9sence visible de son. Elle est plus adapt\u00e9e pour faire du pain complet.<\/p>\n<h5><strong>Farine de bl\u00e9 semi-compl\u00e8te<\/strong><\/h5>\n<p>Elle est interm\u00e9diaire du point de vue de la finesse avec une bluterie de 500\u03bcm. Elle convient pour faire le pain, des g\u00e2teaux, des p\u00e2tes \u00e0 tarte, des sauces.<\/p>\n<h5><strong>Farine de bl\u00e9 Fine<\/strong><\/h5>\n<p>Elle convient pour tous types de pr\u00e9parations avec une finesse \u00e0 300\u03bcm. Ces bl\u00e9s ont \u00e9volu\u00e9s au cour du temps s\u00e9l\u00e9ctionn\u00e9s par les paysans qui les cultivent. Ils ont une diversit\u00e9 g\u00e9n\u00e9tique bien plus riche que les vari\u00e9t\u00e9s qui sont pass\u00e9es par l&rsquo;industrie de l&rsquo;obtention vari\u00e9tale.\u00a0<\/p>\n<p>Les vari\u00e9t\u00e9s sont observ\u00e9s au champs, multipli\u00e9s et test\u00e9s par des boulangers travaillant au levain naturel pour \u00e9tablir un m\u00e9lange qui allierai les qualit\u00e9s gustatives, nutritionnelles et techniques. Elle est aussi utilis\u00e9e pour la confection du pain d\u2019\u00e9pices ainsi que du borch (soupe polonaise). Sa farine est donc d\u00e9pourvue de glutens.
